On Saturday of this week, Vernell of Ole Talk was my guest blogger. We had many requests for her frosting recipe that she uses on her cupcakes. It sounds delicious! I've made a lot of frosting from scratch but I have never used marshmallow fluff. I can't wait to try it:
1 cup butter
2 cups icing sugar
1 cup marshmallow fluff
vanilla essence
milk (optional - add a little milk if the frosting is too thick)
Whisk butter until light and fluffy. Mix in icing sugar, then add the essence and marshmallow fluff and whisk until light and fluffy. This is my base recipe and I usually just add different extracts or spices to this for variety. For example I have added cinnamon and nutmeg to make a spice frosting, a couple tablespoons of Baileys Irish to make frosting for Irish cupcakes and say you wanted to make peanut butter frosting you would use 1/2 cup marshmallow fluff and 1/2 cup peanut butter. I should also note that I usually just wing it when it comes to frosting so adjust as needed.
